What do they do?
After some study I’m guessing that you’re supposed to take those qualities into account when shaping moves and events in the game, but it’s really unclear.

That’s exactly right. Those qualities inform the fiction, they do not actually have set mechanical effects. There aren’t even moves for that, when the player has their animal companion act, then stuff happens. Use the guidelines to frame your response.
Don’t think of it as offloading design work to the GM, think of it as the designers empowering both the GM and the Ranger to be awesome. Be a fan of the player and you can’t go far wrong.
Other than of course the 7 explicitly stated mechanical interactions.

Others here have given you great answers but for a more general rule, when in doubt ask the player how their powers work
Heh, well, trying to write up a new game based on DW, so … yeah.
Tim Franzke has awesome stuff there. The tags are mechanical, but not in a numbers way or an explicitly defined way.
