Hangouts a normally done through an event or a planned hangout. But sometimes you can get a pick-up game going (though you may have to coach some people new to the system).
Character sheets are usually done through Google Docs in a simple format like this:

True Tim Franzke ! The plus side to the G doc is a group of players and characters new to each other will have easy reference to bonds and what not.

That’s a great app for rolling dice in a Hangouts game.
We use Roll20 on a Google Hangout, a Rolz.org dice room, and keep character sheets on Obsidian Portal. It’s pretty awesome.

Roll 20 is good for a large group because you can message in-character while the action is going on and everything is saved so no one (including the GM) misses anything.
