I was looking through the Equipment chapter and noticed a weird thing: bandages seem much better than poultices and herbs. For 10 gold, I can get either 2 of the former (total hp healed: 24, weight 0) or one of the latter (total hp healed: 14, weight 1). Am I missing something?

The only one I can think of is time… if the fiction only gives you time to apply one, the poultices and herbs win.
Bandages are for cuts and poultices are for burns/infections/inflammation.
Poultices might be rarer. Bandages are easy to make, but not every town has a skilled herbalist.
Or, consider the following:
MC: The orc champion drives its spear through your shoulder just before the paladin delivers the killing blow. Take 10 points of damage.
Player: Okay, we’ve got some time now, right? I mark off three uses of bandages. That puts me back to full.
MC: There’s just one wound… how does using three sets of bandages help?
